When I first made this treat for the boys, it was to go with our breakfast on a Saturday morning. I thought it would be fun and knew the boys would enjoy it. I called it breakfast sushi that morning and they got a huge kick out of it. I have since decided that it should be renamed banana sushi because breakfast sushi just doesn’t sound as good when you are trying to serve it to your boys for an after-school snack.

After our first full week of full days at school, the boys come home tired and hungry. The first thing they do as they walk in is head for the kitchen mumbling words like “I’m hungry” or “can I have …?” I am always looking for healthy options and I think this fits the bill. I do let the boys indulge by having cocoa flavored rice cereal on the outside, but overall it is a nutritious snack that keeps them going.

Banana Sushi

Ingredients:
bananas
peanut butter
crushed puffed rice cereal (such as Rice Krispies)

Directions:
Slather the banana with peanut butter, roll in crushed cereal, slice and serve.
