Soccer season is back full swing. (We actually never left but now Jeffrey, William, and Tyler are playing instead of just William.) While I love all the exercise my children (and husband) are getting, it throws my dinner routine into chaos. Three nights a week the boys practice and each night the practice times are different. There is no consistency in our meals and it completely throws me for a loop as I am trying to get myself together.

These quesadillas were my attempt to have a satisfying meal that could easily be staggered to fit into everyone’s schedule. They were delicious. The great thing about quesadillas is that everyone can make theirs to order. I enjoyed barbecue sauce and the works, while the boys had chicken and cheese, Jeffrey chose no barbecue sauce but added salsa instead.

Quesadillas are a great fast meal and you can prep your ingredients earlier in the day and have them ready when needed. You can also add a variety of fillings to make them unique and fun. I loved the grilled pineapple.

Grilled Chicken and Pineapple Quesadillas

Ingredients:
grilled chicken (I sprinkled mine with olive oil and cajun seasoning.)
shredded cheese (I use a combination of pepperjack and sharp cheddar)
grilled pineapple
barbecue sauce
flour tortillas

Directions:
Heat a large skillet or griddle and brush with melted butter. Place a flour tortilla in the pan and top with cheese, chicken, grilled pineapple, and drizzle with barbecue sauce. Top with an additional tortilla. Cook until the bottom tortilla begins to brown. Very carefully, flip the quesadilla over. Cook until the flour tortillas is slightly browned and cheese is melted. Cut into wedges and enjoy!
