I am quite a fan of shrimp scampi. I think the love of shrimp must be hereditary. Both my mother and grandmother loved shrimp. Shrimp scampi, however, always reminds me of my grandmother. Whenever she came to visit, we always had to go to Red Lobster and she would always order the scampi.
This past week Jeffrey had a very busy week at work and by Friday he was exhausted. I had thought about going out to eat, but he crashed as soon as he got in the door. Instead of waking him up and all of us heading out to eat I decided to try this recipe for shrimp that I had seen on Pinterest several times.
The recipe is so easy and I basically just threw everything on the sheet pan and then stuck it in the oven. This was super nice because then I got to spend more time working on our sides. Overall I thought it was a very good scampi. Delicious and Simple!
Shrimp Scampi
ingredients:
2 pounds shrimp (thawed, if frozen)
1 stick of butter
1 packet Italian dressing seasoning
1 lemon, sliced
directions:
Line a sheet pan with foil. Put the stick of butter in the pan and stick in a 350 degree oven to melt the butter. Once the butter has melted remove from oven. Add the shrimp in a single layer. Sprinkle packet of Italian dressing mix over the shrimp and top with lemon slices. Bake for 15-20 minutes.
I made this on Christmas and it was soooo good!!! My family loved it and it’s so quick and easy to make. Thanks for the recipe.

I couldn’t find Italian dressing seasoning so I am going to try a club house pasta salad package instead. I hope it is as good!
The brand I use is Good Seasonings. I find it in the dressing aisle with the ranch seasoning packets.
I cooked noodles and added everything together use lemons for garnish, nice green salad and a crusty bread YOU have a wonderful meal!!!!

I made this last night for dinner. Kind of a spur of the moment kind of thing. My husband said “you knocked this one out of the park”. I doubled the butter and put in a pack and a half of seasoning. Once I took the lemon slices off, I squeezed on a little bit of fresh lemon juice. It was delicious. I ate the leftovers for lunch today and they were just as good as last night. I love love love how quick and easy it was. The has become a staple in our house.
i tried this recipe and it was good I seasoned the shrimp with lemon pepper and lawry seasoning and instead of the Italian dressing packet I used the liquid Italian dressing. I let the shrimp marinate in a bowl while butter was melting it was very good.
I make this for our Halloween and Christmas Parties, and it is ALWAYS THE first dish vone!!! So Easy and So Delicious!!!
Do you peel the shrimp first or do these turn out sort of like when you get steamed shrimp ? I couldn’t tell from the pictures and they do have the tails on.
I use peeled shrimp.
Can you use frozen cooked shrimp and adjust the cook time?

I usually do a salad and sometimes make grits for a little southern flair.
I wouldn’t use cooked shrimp but you could use frozen uncooked shrimp.

I made this tonight! Didn’t see that it called for “uncooked” shrimp until after i made it! Oops! I followed the recipe exactly otherwise and it was delicious!
Isn’t 15 minutes a long time to cook thawed shrimp? I usually only cook it until it becomes opaque.
I have not had a problem with it over cooking and it is just right in my oven but definitely watch it your oven may be hotter than mine. I also use shrimp that has just thawed so they may factor in as well.

I did this recipe in a large frying pan….melted butter, added lemon slices, added defrosted peeled raw shrimp and sprinkled seasoning packet over them. Covered with lid. After 3 minutes I stirred, making sure shrimp got turned to other side. Put lid back on and gave it another 3 minutes. Transfer shrimp with slotted spoon to serving dish and enjoy. Use butter/lemon for start of next batch. This is a great recipe!!! Thanks
This recipe is definitely one to keep. It was easy and delicious. I would probably add some additional lemon juice to butter for additional liquid. My husband and neighbors really enjoyed the meal. I served it with salad and bread. YUMMOS!!
