family time

I know it has been awhile…

Our family had a fantastic trip to Utah. The time away was just what we needed to relax and unwind. I had decided that this trip would be all fun and no work so I decided to take the week off from blogging. I knew I would share with you as soon as we got back home but my computer had something else in mind. When I sat down to work on my post my computer would not connect to the Internet. It was crazy. I am now connecting to the Internet properly, but still having some issues with email. Oh well, I can’t have it all. I am learning to deal with it and at least can get my blogging up and running again.

When we are on vacation, we like to cook several of our meals. We save some money this way and after a long day of skiing I honestly just want to take a shower and put on some pajama pants and veg out. I don’t really have the energy to get all dressed up to go eat out. Do you agree?

We still find time to check out some local restaurants and always find some favorites. My all-time favorite of the week was at Lucky Slice Pizza in Ogden, Utah. They had incredible gluten free pizza and I am still thinking about the salad I had with the balsamic dressing. (It was not your everyday balsamic dressing.)

Like I said, we cooked most of our meals in our condo. This does take some advance planning but it was so worth it. (I can honestly say I was way less stressed about meals on vacation then I am at home and feel that I probably ate better overall then I do at home.

Here is our list of meals for the week…
Rotisserie chicken, green beans, mashed potatoes, and salad
White chicken chili
Italian Beef (I made a gluten free au jus packet that worked well. I will share soon.)
Texas-style Chili Con Carne
Lemon, Chicken and Orzo soup
Spaghetti
Crock-pot Carnitas

I also took a batch of granola that we enjoyed throughout the week.

Thanks for letting me share some of our trip with you. Is it bad that I am already ready to go back?
